Health Interventions In Nutrition: Garlic, Mushrooms & Spinach Saute

Mushrooms are a good source of vitamins, including B vitamins, vitamin D, and minerals like selenium, copper and potassium. Mushrooms also are high in fiber and have been shown to have anti-cancer and anti-inflammatory effect. Plus they are hearty and can be used in a variety of dishes or as a meat substitute.

Spinach is a source of phytoestrogens, folic acid, magnesium and iron. Spinach is rich in antioxidants like vitamin C, vitamin E, beta-carotene, and various flavonoids. These compounds help combat oxidative stress and balance hormones.

Ingredients:

3 tsp Olive Oil

2 Cloves Garlic

2 Cups Baby Bella Mushrooms

2 Cups Baby Spinach

1 Tsp Worcestershire Sauce

Salt & Pepper to your taste.

Heat olive oil in a pan, add garlic, saute for a few minutes onmedium heat until slightly brown. Add Mushrooms. Cook.Stirring Frequently until starting to soften. Then addWorcestershire sauce, Spinach, Salt and pepper. StirFreguently until mushrooms are soft and spinach wilted.

*This is good to eat alone, place on spaghetti squash, on couscous or quinoa. So many possibilities!
