Thyme Chicken w. Tomato Cream Sauce

Thyme is a mild, sweet, woodsy, peppery flavored herb that can be used with most meats, soups and vegetables. This herb is often used with rosemary and sage.

Thyme contains compounds known as phytoestrogens and is a rich source of antioxidants, such as rosmarinic acid, which help decrease oxidative stress and protect cells from damage by neutralizing harmful free radicals. In addition to these antioxidants that contribute to reducing the risk of cancer, thyme decreases inflammation, improves digestion and is antibacterial.

Tomato Cream Sauce


3 TBLSP olive oil

1/4 cup diced garlic

2 cups cherry tomatoes, halved

2-3 sprigs of fresh thyme

1 15 oz can of full fat coconut milk

2 organic, boneless, skinless chicken breasts

salt and pepper to taste

Heat olive oil in a pan. Add chicken, sprinkle with salt and pepper. Cook over medium heat, turning frequently to brown on both sides. About half way through cooking sprinkle with thyme stripped from one sprig. When cooked through, remove from pan and place on a plate, keeping warm.

Add the remaining olive oil and garlic to the pan used for cooking the chicken. Stir to brown slightly. Add in the tomatoes and sauté, stirring frequently, over medium heat until the tomatoes are cooked soft.

Next, pour in full fat coconut milk stirring constantly for about 5 minutes over low medium heat. This will become a creamy tomato sauce. Next add in the thyme and stir, turning the heat to low, simmer for 10-15 minutes.

Place the chicken back into the pan with the sauce, cover and simmer a few minutes. Place the chicken on the plate, topping with the cream sauce.

Serve with broccoli rabe or asparugus or try a saute of vegetables topped with the creme sauce.
